Makes: 14 servings, 1/2 cup
Ingredients:
• 3 1/2 cups oats, rolled
• 1 cup almond, diced
• 1 cup cashews or pecans, diced
• 1 cup unsweetened coconut flakes
• 1/2 cup sunflower seeds
• 1/2 cup pumpkin seeds
• 6 tablespoons unsalted butter
• 1/2 cup honey or maple syrup
• 2 teaspoons vanilla extract
• 2 teaspoons ground cinnamon
• 1 1/2 teaspoons ground ginger
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon salt
Directions:
1. Preheat the oven to 250 degrees.
2. Cover a rectangular baking sheet with aluminum foil or parchment paper.
3. Mix the dry oats, nuts, coconut, seeds and spices together.
4. Heat the butter and honey together over low heat.
5. Once the butter melts stir in the vanilla and salt.
6. Pour the butter mixture over the dry ingredients and stir together until mixed thoroughly and coated evenly.
7. Spread mixture onto prepared pan in one even layer.
8. Bake for 1 hour and 15 minutes.
9. Let granola cool for 15 minutes. Break into small pieces and store in an air-tight container. Store at room temperature for up to 3 weeks.
